  15. 1 stick Cinnamon
  16. 2 Bay leaf
  17. 1 tsp Salt
  18. 1 tsp Cumin seed
  19. 1 liter Water
  20. Spices to sprinkle on layers
  21. 5 Green Cardamom
  22. 1/4 piece Nutmeg
  23. 2 small petals Mace
  24. Make powder of all
  25. For steam (Dum ke liye)
  26. Saffron mixed in half cup of milk
  27. leaves Mint
  28. 1 Brown onion
  29. For Rice boiling
  30. 1 tsp Cumin
  31. 1/2 tsp black cumin
  32. 2-3 Bay leaf
  33. Nutmeg, mace, A little
  34. Salt as required
  35. Mint leaves as required

Instructions to make to make Khas Mutton Biryani (Dehli style)

  1. For stock: add water and above-mentioned ingredients with mutton and cook until meat is tender and stock remains 1 cup. Strain stock and take out mutton pieces.
  2. Boil rice with the ingredients mentioned above. They should b 3/4 done
  3. In a pot, add ghee, add onion paste and cook until Color changes.
  4. Add ginger garlic paste, saute it and add mutton. Mix and cook it
  5. Add green chili paste, red chili powder, salt coriander powder, mix it and add yoghurt. Add stock in it and cook it well. There must b stock type gravy in it.. don't dry the Masala.
  6. Spread rice over gravy, sprinkle spices over layer, sprinkle Brown onion and make next layers.
  7. In the end sprinkle saffron milk, and 1 tbsp of desi ghee, add some fried almonds and let them on steam for 15 minutes.
